Crispy Barramundi with Mango Salad

A summery dinner you can have on the table in ~15 minutes, that’s also fertility-friendly? Sounds like exactly what I’m looking for!
Fish is an important part of a fertility-friendly diet because it’s the best source of marine omega-3s, DHA + EPA. These powerful fats are some of the most important nutrients to support ovulation, implantation and a healthy pregnancy!

Serves 4
- 4 barramundi portions
- 2 tbsp olive oil
- 2 ripe mangoes, diced
- 1 small red onion, diced finely
- 2 cups purple cabbage, shredded
- 1 avocado, diced
- ½ cup mint leaves, chopped roughly
- 1 lime, juiced
- Rub olive oil into barramundi then wrap each piece in aluminium foil. Salt generously.
- Bake in the oven at 180℃ for 10-12 minutes, or until fish is white inside.
- Toss cut mango, red onion, cabbage, avocado and mint in a bowl with the lime juice. Serve fish over salad and enjoy.
